Observation (CORRECTED DURING INSPECTION): No approved sanitizer (i.e.: QUATs) available at the preparation area. Operator informed that low-temperature dishwasher is being used to wash and sanitize kitchen equipment. Low-temperature dishwasher measured at 0ppm chlorine.
Corrective Action(s): Ensure that a QUATs spray bottle or sanitizer bucket is present at the preparation area to ensure that cleaning and sanitization of food contact surfaces.

All kitchen equipment/utensils must be washed and sanitize using the 3-compartment sink method (i.e.: wash, rinse, sanitize, and air dry) or service the low-temperature dishwasher to measure at least 50 ppm chlorine to be able to use the unit to wash and sanitize equipment/utensils. Operator informed that they will use 3-compartment sink method.

Routine Inspection conducted today.

Handwashing sink well equipped with hot and cold running water, liquid soap, and paper towels.
QUATs dispenser measured at 200ppm. 3-compartment sink available on-site for manual dishwashing.
Only 1 stand-up cooler in use and measured at 4C. Only 1 stand-up freezer in use and measured at -21C.
Operator informed that he has Foodsafe level 1 certificate. Must have copies of certification on-site for review. Email District EHO of Foodsafe level 1 certificate.

NOTE: If operator plans to process hot foods such as spring rolls and hot-hold them, operator must submit updated food safety plan, sanitation plan, and updated floor plan for review and health approval. Facility is not currently approved to process and hot-hold potentially hazardous foods.
