Observation (CORRECTED DURING INSPECTION):
1) Sushi bar once again does not have any detectable chlorine in sanitizer bucket.
2) Wiping cloths noted again on counter.
Corrective Action(s):
1) Sanitizer must be avialabe at all times. Make new solution now.
2) Wiping cloths must be stored in sanitizer when not in use. This is your final warning before an issuance of a Violation Ticket

1) Cardboard noted lining shelves in back kitchen.
2) Tape covering cooler door handles, dry ingredient bucket and electrical outlet.

Comments

General:
- handwashing station clear of debris
- ensure staff wash hands with soap and water; gloves are not a replacement for handwashing
- food organization has improved (raw meats and eggs stored on bottom shelves)
- food containers no longer directly on floor
- sanitation has improved - this must be maintained

Discussed operation history with staff:
- with the exception of the initial opening inspection and a routine inspection in Feb 2020, all unscheduled routine inspections have garnered a moderate or high hazard rating - this must improve or menu will be reduced to a level this kitchen can safely manage
