Observation (CORRECTED DURING INSPECTION): Quats sanitizing spray bottle located at the front service area measured with a concentration of 100 ppm. 200 ppm is required to properly sanitize food contact surfaces.
Corrective Action(s): Staff discarded and refilled the bottle with 200 ppm quats sanitizer. Clean and sanitize all front service area food contact surfaces again.

Routine inspection:
- Coolers (beverage, sandwich, stand-up, glass-door) maintained at 4C or less.
- Chest and reach-in freezer maintained at -18C or less.
- Hot holding unit able to achieve above 60C.
- Hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- Low temperature dishwasher dispensed 50 ppm chlorine sanitizer at the surface level.
- Raw meats in the stand-up cooler must be stored on the tray completely to prevent any meat juice leaks.
- Temperature records not available for review at the time. Chef stated records were taken by the owner and not on site at the time. Reminder that temperatures must be monitored / recorded at least on a daily basis and available for review during inspection.
- No pest activities observed at the time.
