Observation: Small line cooler measured at 19C chopped onion and cucumber stored in inserts. Operator stated this unit only used in lunch rush. Operator moved food to walk in cooler at the time of this inspection. Operator also stated replacing this unit is in order.
Corrective Action(s): Do not store hazardous food in this unit until is repaired or replaced. Use walk in cooler or other line cooler to store food.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): No sanitizer available to sanitize cutting boards and other food contact surfaces. Operator made bleach water solution of 200 ppm. Bleach water is now provided in small buckets. Wiping cloths stored in the bleach water solution. Ensure to renew everyday or as water gets murky.
Corrective Action(s): Ensure to keep wiping cloths in the solution. Do not leave cloths on counters.

Observation: No independent thermometer noted in walk in cooler,line cooler, chest freezer and beverage cooler.
Corrective Action(s): Provide each cooling unit with an accurate independent thermometer. Record temperature for all cooling units twice daily. Keep this log updated. Keep records.

Routine inspection conducted today.

- Hand washing station supplied with soap and paper towels and in good working condition. Ensure to keep food away from the hand washing sink. Staff hand washing after using washroom discussed. Use of single use gloves and hand washing between discussed.
- Walk in cooler measured at or below 4 degree C. Organizing and covering food items inside this unit discussed.
- Chest freezer and under counter freezer measured at -16C to -18C. Food is frozen to the touch.
- Dishwasher maintained 50 ppm chlorine residual in the final rinse water. Detergent and rinse aid available.
- 2- comp sink maintained. Small leak observed over the faucet in this sink. Operator is to repair /replace this faucet.
- Floor noted clean.
- Counters noted maintained. Some dishware and utensils are to be organized and kept in clean containers.
- No obvious sign of pest activity noted at this time.
- General sanitation is overall good.
- Customer washrooms maintained.

A section in front observed with new equipment, new cabinetry and operator stated, they intent to serve food for take out from this section. Please note that Fraser Health approval required for adding additional food handling sections to your facility. Send your updated floor plan regarding this new addition to your area health inspector.
