302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): A) Did not detect any sanitizer at the dishwasher. Sanitizer container for dishwasher was empty. Operator replaced sanitizer at time of inspection.
B) Noted mildew/staining in the ice machine
C) Spray bottle with sanitizer at the bar was not working and the solution in the spray bottle was too strong (bleaching out the test strip).
Corrective Action(s): A) Ensure dishwasher is capable of sanitizing at all times. Check dishwasher first thing at the start of the day and half way through the day. Ensure sanitizer container is checked and replaced when starting to get low. Dishwasher had 50ppm sanitizer when operator replaced the sanitizer container and ran the dishwasher several times.
B) Discard ice. Thoroughly clean/sanitize the ice machine. Ensure the ice machine is emptied/cleaned/sanitized routinely - suggested minimum once a month.
C) Obtain a spray bottle that is capable of spraying. In the interim, staff can use a container to hold sanitizer and submerge cloths. Ensure sanitizer concentration is maintained at 100ppm (mix 2 to 5 ml bleach per liter of water).

Observation (CORRECTED DURING INSPECTION): Ice machine had mildew/staining on the inside.
Corrective Action(s): Discard ice and thoroughly clean/sanitize ice machine. Ensure ice machine is emptied and the inside is cleaned/sanitized regularly - suggest to be done minimum monthly.

Observation: Noted back door to kitchen open.
Corrective Action(s): Keep back door closed or install a screen to prevent the entry of pests.

Observation: Noted the other tap at the two compartment sink in the kitchen is broken and a wrench is fixed it to turn the water on and off.
Corrective Action(s): Repair/replace tap as needed. To be corrected by next follow up inspection.

Comments

- Hand wash stations had soap, paper towel, hot and cold running water
- All coolers (walk in, upright two door, prep cooler...etc)
- Freezers -16C to -21C
- Premises does not do any hot holding
- Meat slicer was just used at time of inspection. Ensure meat slicer is take apart and thoroughly washed/sanitized after each use.
- Sanitizer in kitchen 100ppm chlorine
- Scoop for ice machine and ice well at the bar stored outside of the ice in a separate container.
- General sanitation satisfactory. No obvious signs of pest activity at time of inspection.
- Door to washroom in the kitchen was self closing
- Lights in the food preparation had sleeves/covers
