Observation (CORRECTED DURING INSPECTION): Surface sanitizer at 0 ppm chlorine solution.
Corrective Action(s): The staff prepared new surface sanitizer at 100 ppm chlorine solution. Ensure to have surface sanitizer available at all times to clean and disinfect food contact surfaces. All purpose cleaner is not a substitute for chlorine sanitizer.

Observation: Dry storage room is not maintained in a sanitary condition. Multiple prepackaged food items stored directly on the floor.
Corrective Action(s): Store all items at least 6 inches off the floor to ensure proper cleaning is done in hard to reach areas. Better organization in the dry store area is needed.

Comments

- General sanitation is good.
- All handwashing stations are stocked with cold/hot running water, soap, and paper towels.
- Coolers (upright, prep) < or = to 4C.
- Freezers (chest) < or = -18
- Other Hot holding units > 60C
- Ensure to store rice scoops in ice water and changed frequently (ie. every 4 hrs).
- High temperature dishwasher reached 76C at the plate's level at the final rinse cycle.
- Ice machine is clean. No signs of mildew build up. Recommended not to store ice scoop inside the machine.
- Dry storage area is good. Dry food items stored in bins with proper lids. Do not store scoops inside the cart.
- No signs of pest activities at the time of inspection.
- Provide copies of all FOODSAFE certificates and have it available on site for verification by the health inspector.
