Corrective Action(s): Must ensure to wash and sanitize all food contact surfaces to remove food debris at least every 4 hours.

Observation: Food debris noted in hard to reach areas under cooking equipment and shelving units, as well as in hard to reach areas under prep area and inside coolers and freezers.

Observation: Found a sushi rice dispenser in the middle of the kitchen, no approval was given to add equipment.
Corrective Action(s): Must receive approval before adding any new equipment or making changes. Submit a proposal of where the sushi rice dispenser will be moved to.

Comments

- Coolers other then 2 door stainless steel were 4 C or colder
- Freezers were - 18 C or colder
- Hot holding was 60 C or hotter
- Hand sinks had liquid soap, paper towel, hot and cold water are present
- Spray bottle had 100 ppm quat make sure to follow manufactures instructions for concentration
- Dishwasher had a final rinse of 50-100 ppm chlorine
- No signs of pest infestation noted during the inspection.
