Observation (CORRECTED DURING INSPECTION): Inquired operator what temperature does she reheat the meat to and she replied 65C.
Corrective Action(s): Food should be reheated to 74C not 65C. Review your Foodsafe material and train all staff.

Observation (CORRECTED DURING INSPECTION): Grilled chicken stored in the hot holding unit were probed to be 54 to 57C. Repeat. Next repeat of this violation may result in enforcement action.
Corrective Action(s): Hot potentially hazardous food must be stored at 60C or hotter. Operator reheated the meat to 89C by microwave at time of inspection.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1) Inquired operator manual warewashing procedure and she replied to sanitize clean dishware with 50ppm bleach for undetermined amount of time. 2) Detected 50ppm bleach in bucket of sanitizer.
Corrective Action(s): 1) Follow FHA wrewashing diagram on the wall. Sanitize cleaned dishware at 100-200ppm for 2 mintues before air dry. 2) Operator adjusted concentration of bleach at time of inspection. Test strips within expiry date onsite.

Observation (CORRECTED DURING INSPECTION): Multiple pots and utensils were hung above the kitchen handsink, obstructing the access to the handsink.
Corrective Action(s): Relocate the pots and utensils so that they do not block the kitchen handsink.

Observation: Mice droppings found behind standup pop cooler in the kitchen, trailing to under oil storage area. Higher activity than last visit noted behind chest freezer in the back.
Corrective Action(s): Removed droppings and sanitize all surfaces with 100ppm bleach as directed. Forward pest control reports from last three months to Health Unit for review. Seal any potential entry points.
