FoodSafe certified staff on site. Good. There must always be one person on site during operating hours Staff said all ware washing is occurring at the back bakery sinks where chemical dispensers are set up A quat sanitizer spray bottle was filled at time of inspection. Make sure there is always one available on site for use. Thermometer on site and out for use - probe each batch of hot dogs, and regularly check your hot holding (74C cook, 60C hot hold)
