Observation (CORRECTED DURING INSPECTION): Several hand washing stations lacked liquid soap and paper towels for employees. Operator indicates the units were stolen and requires repair/replacement. Staff were washing their hands at fully stocked hand washing sinks during service.
Corrective Action(s): Ensure all hand washing stations have liquid soap, paper towels and hot and cold running water. While waiting for repair, stock up all stations with temporary liquid hand soap and paper towels. This includes the customer washrooms. Correction required immediately.

Observation: Dish washer unit has been broken and does not sanitize automatically. Staff have been manually injecting chlorine sanitizer into unit during the wash cycle at over 100 ppm chlorine. Records indicate sanitizer level checks were not completed correctly.
Corrective Action(s): Repair this unit to ensure the final rinse cycle can adequately sanitize automatically as per manufacturer's specifications. Check sanitizer levels with test strips as per sanitation plan with documentation. Correction required today.

Food protected from contamination. Utensils and take out containers are sanitary.
Ice machine is sanitary with dedicated scoop.
200 ppm quat sanitizer in use for food contact surfaces.
Permit posted in visible location.

2 soup holding units at 62.1C. Pop cooler 4C juice, bar cooler at 3.5C mayo,
white fridge top frozen berries at -20C, bottom strawberries at 4C,
glass cooler cheese at 4.0C, white freezer yam fries at -16C,
two deli coolers at 4C and below sauces and sliced tomatos,
bar cooler at 4C lemons, walk in feezer at -16C to -22C frozen pie and fries,
walk in cooler 4C fries.

Covid Safety Plan in use and available for review.

Proactive maintenance/repair for build up of ice in walk in freezer unit to prevent fridge failure and replacement of light covers above work food prep areas to prevent food contamination is recommended.
