Observation (CORRECTED DURING INSPECTION): Metal dish and weighing scale in the dry storage room had significant amounts of sugar caked on.
Corrective Action(s): Clean the metal dish and weighing scale of the caked on sugar. Ensure cleaning and sanitizing is performed after using any equipment. Leftover food debris on equipment can promote bacterial growth and be a food source for pests. Date to be completed by: Immediately

Observation (CORRECTED DURING INSPECTION): Bucket of bleach sanitizer in the kitchen was measured to be 50 ppm. Operator states that the bleach sanitizer is prepared fresh every morning. Test strips are available.
Corrective Action(s): Prepare a new batch of bleach sanitizer at 100 ppm. This can be achieved by mixing 1/2 teaspoon of bleach and 1L of fresh water. Ensure that this is prepared regularly and measured with the test strips to maintain adequate concentration. Date to be completed by: Immediately

Observation (CORRECTED DURING INSPECTION): Ice scoop was stored inside the ice machine and in direct contact with the ice.
Corrective Action(s): Remove the ice scoop from the ice machine and store in a separate location. Scoops should not be store directly with any food/ice to avoid contamination from the handles. Date to be completed by: Immediately

-General sanitation is satisfactory. Continue to clean regularly throughout the facility in areas including but not limited to: floors, underneath and behind equipment, shelving, and other hard to reach areas.
-All hand washing stations are equipped with hot and cold running water, liquid soap, and paper towels
-Coolers (walk-in, prep, stand-up) at < or = 4C
-Freezers (stand-up, chest) at < or = -18C
-Hot holding unit at > or = 60C
-Low temperature dishwasher in use. Chlorine sanitizer concentration reached 50 ppm at the plate level during the final rinse.
-Washrooms provided to customers are clean and equipped with adequate hand washing stations
-No signs of pests observed during inspection
