Observation: No paper towel at hand washing sink in deli. Also rubber gloves and stuff was stored in the sink.
Corrective Action(s): Enough supply of paper towel to be available at hand washing sink at all time.

Observation: Box of frozen meat noted in sink in box at room temp.
Corrective Action(s): Defrosting must be done either in cooler in advance or under cold running water ( in plastic package) in a clean container

Observation: Rodent dropping noted on shelving, and food counters, shelving, and under equipment , under sink.
Corrective Action(s): Clean all the area.

-Store all foods products in rodent proof containers.

Observation: Clutter noted in deli area, also some tiles are broken, It appears that there is a small hole noted under cooking equipment ( corner)
Corrective Action(s): -Organize the deli, keep all food products in rodent proof containers.
- Seal any holes or any opening around piping to prevent rodent entry.

Observation: Poor cleaning noted in deli, under sinks, under equipment, wall behind sinks...
Corrective Action(s): Deep clean the deli.

Comments

Close the facility immediately.

General notes:
-Deli and meat department are side by side
-Hand wash sink stocked with soap and paper towel ( hot and cold water)
- 3 compartment sink for manual dishwashing, sign is posted
-Hot holding unit temp >60 oC
-Temp of coolers and freezers are satisfactory (< 4 oC ,and < -18 oC respectively)
-Sanitizer in spray bottle >100 ppm
**-Pest control company is servicing by weekly -Orkin
** Full assessment to be done by the pest control to identify any structural deficiencies contributed to rodent issues ( for the whole facility)

** Inspection is not conducted for the whole store however, rodent issues is not limited to Deli, for store, check , seal any opening that allows rodent entry, clean and store all food products in soft packaging in sealed rodent proof containers.
- To re-open contact the area inspector via email send a report of what has been done and request for opening inspection (address all noted issues) along with a copy of Pest control report (pictures are asset)
Note: Signature of recipient on report not required at this time due to Covid19 safety protocols. Observation and issues are communicated with the staff , a copy is provided to the manager.
