- Routine inspection conducted.
- Hand washing sinks properly supplied with hot/cold running water, liquid soap, and paper towels.
- Bleach solution available for sanitizing food-contact surfaces at 100 ppm (chlorine residual).
- High-temperature dishwasher reached 73C at the dish surface during final rinse. Good - minimum of 71C at the dish surface is required.
- Coolers measured 4C or colder. *Note: sushi bar cooler and one undercounter cooler not currently in use and used for dry storage only. OK.
- Freezers measured -18C or colder.
- No hot-holding at time of inspection.
- Accurate thermometers available.
- Food storage practices satisfactory.
- Equipment generally maintained in sanitary conditions.
- No signs of pest activity noted at time of inspection.
