Observation (CORRECTED DURING INSPECTION): Donair meat is shaved off the skewer and placed in a tray at room temperature, meat is reheated when donair is served.
Corrective Action(s): Donair meat must undergo a secondary cook step to 74C (chicken), prior to hot holding at 60C or greater. Donair meat was reheated to 74C at the time of inspection and placed into a hot holding unit at 60C at the time of inspection.

Observation (CORRECTED DURING INSPECTION): No bleach sanitizer was prepared at the time of inspection.
Corrective Action(s): While in operation, bleach at 100ppm to 200ppm must be prepared to sanitize food contact surfaces. Bleach at 200ppm was prepared at the time of inspection.

-Deli slicer properly disassembled for cleaning and sanitizing.
-Foods properly stored off the ground and covered.
-No signs of pests noted at the time of inspection.
