Observation: Floor of cook line, especially under grill is VERY dirty. Showed and discussed with mgt.
Corrective Action(s): This needs to be cleaned on daily basis, and verified by mgt and supervisory staff. Discuss roles and responsibilities with kitchen staff and cleaners to ensure job is completed. This will be reviewed on follow up inspection date noted.

Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation: a) Prep line inserts not fitting into cavity properly causing three of the inserts at the fish station to stick out, causing cool air loss. These inserts (one of which holds tzatziki) not able to maintain 4 C or less. Also, stresses temperatures across the insert line.
b) Tarter sauce (in house made) housed in squeeze bottle (other sauces similarly housed) which cannot keep proper temperature below 4 C.
Correction: a) Make sure all inserts fit properly into available space with no air gaps. Recommend use of stainless steel inserts to improve temperature controls.
b) House sauces in ice bath in inserts at this and other similar stations. Replace ice when gets low. Must maintain 4 C or less at all times.
Comments

Fly population is notably improved. Discussed fly issue with mgt. Walk through of premises. Noted the following:
- Bar area: Several gaps at base of under counter coolers and serving as breeding places sealed at the request of PCO. Staff routine cleaning adjusted to help with the fly issue. Base of glass washer cleaned and will be part of increased cleaning schedule.

- Janitor room: Mop holders purchased and placed, cleaning in this room improved, additional dusters purchased and cleaning schedule changed to improve sanitation of this equipment.
** Broom also needs regular cleaning/replacement - Recommend the broom get sprayed free of dirt on bristles on daily basis.

- Dishpit: Changes made to existing cleaning schedule and quality to help reduce fly breeding. Under stainless steel counter in this area included. Manager to ensure more of the stainless steel seams get sealed up to prevent breeding opportunities (review at next scheduled inspection).

- Back changeroom area and toilets: Sink identified as possible breeding site. Siliconed as temporary measure, but unit to be replaced. Continue to seal holes in area to minimize breeding.
**Rag/linen bin continues to be an attractant, if not breeding opportunity. Lots of flies noted on bin despite traps close by.
Find a better way to isolate the linens and prevent potential breeding. Cover, store in alternate location, remove linens more regularly all options.

Drain/fruit flies still present, but improved significantly.

- Ice machine: Cleaned up behind. Looks better.
