Observation:
1. White plastic lip inside ice machine has some mould growth.
2. Propellers inside dishwasher have accumulation of grime and scum.
Corrective Action(s):
1. Remove and discard ice from ice machine. Clean and sanitize inside the ice machine as per the manufacturer's instructions.
2. Clean the propellers inside the dishwasher. Ensure to clean all parts of the dishwasher on a regular basis.

Routine Inspection:
- All hand washing stations fully equipped with liquid soap, paper towels and hot/cold running water.
- Proper and frequent hand washing observed at the time of inspection.
- All temperatures met health requirements:
Display coolers maintained at 4 degrees Celsius.
Walk-in cooler = 3.1 degrees Celsius.
Walk-in freezer = -18.6 degrees Celsius.
Steam tables for hot holding maintained above 60 degrees Celsius.
- All prep sinks equipped with hot/cold running water.
- General food storage practices very good:
Foods covered and protected from contamination.
Foods stored at least 15 cm (6 inches off the floor).
Dry storage organized.
No dented cans observed.
Bulk foods stored in pest proof containers.
- Concentration of QUATs sanitizer in all spray bottles = 200 ppm.
- High temperature dishwasher sanitizing with 74.6 degrees Celsius at dish level after the final rinse cycle (wash temp. = 66C, rinse temp. = 83C).
- 3-compartment sink available for manual warewashing. Drain plugs available.
- Ice scoop for ice machine stored in designated slot.
- Chemical storage room organized.
- All equipment stored in a sanitary manner.
- Permit to Operate posted.
- Premises well lit.
- No signs of pest activity at the time of inspection.
