All fridges are 4 degrees C. or colder. Freezer is -18 degrees C or colder. Dishwasher reached 71 degrees C at the plate surface during the final rinse. Quat sanitizer measured 200 PPM residual in spray bottle. Ensure that there is a spray bottle available in the servery area when providing espresso drinks. Soap and paper towel at handsinks in kitchen. General sanitation is overall excellent. Please provide a food safety plan and sanitation plan for espresso drinks. Temperature logs are being maintained.
