Observation (CORRECTED DURING INSPECTION): Creamer in thermos stored at room temperature for extended periods of time according to operator. Reminder that these need to be kept under 4C or less. Temperature measured 6C. This issue noted only in Christensen and Justinson & Nielson servery.
Corrective Action(s): Move creamers into coolers when they are not in use to prevent temperature abuse. Discard creamers that have been brought out today at room temperature since 1030am. Date to be corrected: immediately

Observation (CORRECTED DURING INSPECTION): 1) 2 wiping cloths stored on table by cooking line. These need to be stored in sanitizer solutions to prevent the spread of bacteria
2) 3 quat buckets in 3 severies (Anderson, Justinson & Nielson, Christensen) were measured above 400ppm quats. 200-400ppm quats are required. Reminder to follow mixing instructions on label.
Corrective Action(s): 1) Store wiping cloths in 200ppm quat sanitizer buckets.
2) Dilute or remake quat solution to maintain 200-400ppm quats.

-Handwash stations contain hot water, liquid soap, and paper towel. None were blocked at time of inspection.
-Coolers measured 4C or less: stand up cooler and walk in cooler
-Walk in freezer -17.4C
-Hot holding units measured above 60C. All will be transported to designated servery
-Temperature logs available
-Quat buckets measured 200ppm
-Quat dispenser at 3 compartment sink measured 200ppm
-3 compartment sink have drain plugs
-High temperature dishwasher measured 75.9C at the plate level
-Dry storage is satisfactory. Foods stored off the ground and foods are covered or in original packaging
-Chemical storage is satisfactory. No foods stored in here
-No major signs of pest during inspection. Pest reports provided and frequency is monthly. Minor dead cockroach activity in electrical units.
-Foods are covered and protected from contamination in coolers and hot holding units
-Meat slicer and other equipment are stored in a clean condition.
-Ice machine is kept in a clean condition.
-General sanitation is satisfactory
