Corrective Action(s): Operator must ensure that all dishware is washed, rinsed, and sanitized as outlined in the manual warewashing method posted above the sink.
Keep third compartment of the sink filled with 100 ppm chlorine bleach sanitizer solution for convenient warewashing throughout the day

Observation (CORRECTED DURING INSPECTION): Back of house area being used to portion chicken however handsink was not stocked with any liquid soap or paper towels.
Corrective Action(s): Do not use this back area for food handling unless the handsink is fully stocked with liquid soap, paper towels, and hot/cold running water at all times.
