Observation (CORRECTED DURING INSPECTION): High-temperature dish sanitizer reached a maximum of 64 - 66 C at the plate level during inspection. Staff have been using the machine to sanitize dishware. A minimum of 71 C at the plate level / 82 C at the manifold is required for this purpose.
Corrective Action(s): Manual sanitizing sink set up during inspection, using 200ppm bleach. Ensure all dishware is sanitized in this solution for 2 minutes after washing and rinsing, and is then air dried before use.

Observation (CORRECTED DURING INSPECTION): No hand soap was available at the back kitchen hand sink.
Corrective Action(s): Replaced with detergent during inspection. Ensure the soap dispenser is refilled by tomorrow morning (28th July 2016).

Corrective Action(s): Have the machine repaired or adjusted by tomorrow morning (28th July 2016). Call the area inspector for a reinspection once serviced (card provided). Ensure directions in violation (302) above are followed in the interim.

*General sanitation very good throughout kitchen and front service area. No pest issues observed during inspection.
*All cooler and freezer temperatures satisfactory.
*Food is wrapped and sealed in individual portions, or is generally stored in a manner that protects it from contamination.
*Ice machine maintained in clean condition.
*Products in coolers are labeled with dates.
*Cleaning and sanitizing procedures for blender jugs and utensils are being followed (see violations section regarding sanitizing).
*Juice machines are fully disassembled and cleaned daily. Wheatgrass grinder on similar schedule.
*Blender jugs for common allergens are kept separated from those for general use.
