Routine inspection conducted of school cafeteria. Facility maintained in excellent sanitary condition
1. Temperatures (Max: 4C for coolers; -18C for freezers; Min: 60C for hot-holders)
- Chest freezer and stand-up freezer at -20C
- Stand-up coolers and display cooler at 4C
- Hot-held items on display at 62C
- Temperature logs maintained and up-to-date
2. Hygiene and Sanitizing
- Handwash station adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
- Sanitizing compartment of 3-compartment sink contains 200 ppm chlorine residual
- Bleach solution available for non-food contact surfaces (where money is handled)l, all spray bottles adequately labelled
- Quaternary ammonium compound (quats) sanitizing pail not in use at time of inspection as kitchen was in the process of cleaning up for the day after service. Quats test strips available, logs indicate that it was at 200 ppm the day of inspection
- Ventilation slats, utensils in drawers, including can openers and peelers, maintained in sanitary condition
- Juice dispensing machines and coffee machines at front are well maintained. Reminder: Nozzles need to be wiped down with sanitizer nightly
3. Storage
- All items stored at least 6" off floor
- Dry storage bins secured with pest-proof bins with tight-fitting lids, scoops stored inside with handles protruding outwards - good
- Chemical storage inside cabinet separate from all food preparation areas
4. Pest Control
- No visible signs of recent pest activity at time of inspection
- Entire school contracts a third-party professional pest control company to conduct routine inspections
5. Administrative
- Permit posted
