Observation: Noticed a flour beetle in one of the flour bins.
Corrective Action(s): Discard the entire bin as such immediately. Thoroughly clean and sanitize all bus pans, trays and ladels etc that has build up of flour. All flour, rice and grain products must be kept in bins with tight fitting lids at all times.

Clean and organize all shelves in the dry storage area and remove any items that are not in use

Observation: The inside plastic cover on the freezer lid is broken. This may expose the food products to insulation materials.
Corrective Action(s): All open food products were transferred to another freezer. Replce the plastic cover or purchase a new freezer to ensure all food products are stored in a safe manner ( Immediately)

Floors behind the deep freezer and coolers are now clean.

* All dry storage shelves must be thoroughly cleaned.

Front area beverage cooler < 4 C.
Preparation cooler across from the grill <4 C
Hot holding of rice >60 C.
Deep freezers and upright freezers below -18 C.
Liquid soap and paper towels available at the hand sink.
Dishwasher final rinse: 73 C at the plate surface.
Wiping cloths stored in 200 ppn chlorine bleach solution.
