Observation: Facility does not have an Operating Permit, instead a Validation letter with decal was posted near the front counter area.
Corrective Action(s): Ensure that a valid Operating permit is posted in a conspicuous location. If the operating permit is misplaced or lost, a Replacement Operating permit can be obtained by sending a request to district EHO.

Comments

Routine inspection conducted at food facility and the following observations were made during the inspection:

Temperatures:
- Undercounter cooler at 5.8C.
**Ensure that the cooler is maintained at least 4C.
- Undercounter freezer unit behind counter at -13C.
- Hot-holder for sausages at approximately 61C.
- Back storage area stand-up freezer at -14C at the top and -6C at the bottom shelf. Freezer was found overstocked.
**Ensure that the freezer is not overstocked as it can hinder air circulation within freezer.
- Store walk-in cooler at 4C.
- Store chest freezer (ice cream) at -18C
- Store front display cooler at approximately 3C.
- Store relish / condiment cooler at approximately 2C (top & bottom)
- Mayo and chili sauce hot held at 59C.
**Ensure that potentially hazardous food is hot held at 60C or above.
- Temperature logs were maintained and found up-to-date.

Hygiene and Sanitizing
- Hand wash station was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels in front service area.
- Sanitizer spray bottle available and the concentration of QUATS noted at 200ppm.
- Sanitizer dispenser releases 200 ppm QUATS at 3-compartment sink.
- Utensils and tongs were found in sanitary condition.
- Slushie customer self-serve area was found clean.
- Washrooms maintained in good sanitary condition.
- Sanitizer logs were maintained and found up-to-date.

Storage
- All food items were stored at least 6" off the floor.
- All products are in original packaging or covered inside coolers.
- Chemicals, including QUATS and cleaners, were stored separate from food preparation areas.

Pest Management
- Professional pest control company conducts routine checks. Last inspection conducted on May 31.
- No visible signs of pest activity observed at the time of inspection.
- Mechanical traps were present throughout the facility.

Administrative
- Operator has valid FoodSafe Level 1 Certificate.

COVID-19 Safety Plan
- A copy of COVID-19 Safety Plan was available on site.
- COVID-19 protocols were found in place.
- Staff health checks were conducted and records were maintained.
