Followup inspection to Rpt # 257022: Preparation cooler inserts at or below 4 degrees C. Lower section ambient air temperature ~ 2-3 degrees C. Operator has implemented on a clipboard temperature monitoring records for coolers and hot holding. 200ppm quats available for use in labeled spray bottle. Hand sinks provided with liquid soap and paper towels. Donair product undergoing a secondary cook step on flat grill before being placed in a hot holding unit.
