Observation: Mouse droppings found on food contact surfaces and food areas. Including (but limited to):
- small square bowl
- counter across from grill area
- table with meat slicer
Corrective Action(s): Clean these areas immediately and ensure that all areas are sanitized.

Observation: Significant number of mouse droppings found throughout premise including (but limited to):
- behind ice machine
- walk in cooler floor
- walk in cooler corner on ledge where glass doors are behind shelving
- food contact surfaces (see code 301)
- around bar glass washer
Corrective Action(s): Remove all mouse droppings, clean and sanitize all areas. Due: Friday June 9, 2023

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation: Several areas throughout premise that were found where mice appear to be moving through including:
- mesh with approx 1"x3" holes in walk in cooler separating the beer storage for store from walk in cooler area used for kitchen
- hole in back right corner of bottom shelf in dry storage room
- hole in wall under steel shelf in wall backing onto kitchen prep area
- hole in beer walk in cooler in far back corner behind kegs
- hole in wall in main kitchen at end of line cooler (staff state that this was already noted by them a couple of days ago)
Corrective Action(s): 1) Switch out mesh for a finer mesh that mice cannot fit through 1cm x 1cm or finer that still allows for adequate air flow through so temperature of side used for kitchen is not impacted. Also ensure that mesh is properly secured around mesh perimeter to prevent mice from going around it. Due: June 21, 2023
2) Plug holes with a durable, pest proof material to prevent movement of pests through premise. Due: Friday June 9, 2023

Note: Owner stated that cosmetic renovations being done in parts of the restaurant but not kitchen. Walls may need to be opened up in kitchen to identify harborage areas for mice. Ensure construction is done in such a way/time that food areas and food are not impacted.

General observations:
√ All other coolers ≤4°C, Freezers ≤ -18°C, Hot holding ≥60°C
√ Food up off floor ≥6”, good stock rotation noted
√ Hand wash stations fully stocked with hot and cold running water, liquid soap and paper towel
√ Quats sanitizer available at 200ppm
√ Low temperature dishwasher at or just above 50ppm
√ Equipment appeared to be in good working order
√ Staff with FoodSafe (or equivalent) present.
√ No concerns with staff hygiene or food handling noted during inspection
