- Hand washing stations are supplied with hot/cold running water, liquid soap and paper towels in dispenser.
- Floor is clean and maintained. Counters observed to be clean and organized.
- Fish sink is clean and sanitizer available from dispenser. QUAT 200-400 ppm available. Test strips are provided.
- Walk-in cooler measured at 4C or colder. Walk-in freezer is at or below -18C. All display freezers related to meat and seafood department measured at or below -18C.
- All display coolers in the store related to the meat and seafood section measured to be at or below 4C. Temperature log maintained via store automated system. Thermometers noted to be functional.
- Display coolers for sea food and marinated meat measured at or below 4C.
- Ice machine observed to be clean. Ensure to store ice shovel (scoop) in a separate sanitary container. Ice buckets are to be clean and sanitize before transporting ice to the coolers.
- Knives were stored properly. Knives in use are to be adequately washed and sanitize at least every 4 hours.
- Meat packaging area observed to be clean and well maintained.
- Pest management and control is in place for the entire store.
