Observation: Food/debris noted throughout facility - prep surfaces, lower shelving, behind/under equipment, storage shelves, etc. Unused items noted being stored in prep areas.
Corrective Action(s): Clean and organize facility. Establish cleaning schedules, including "hard to reach" areas. (ie: behind/under coffee equipment, etc) Store all items in designated areas. Remove All unused/unwanted equipment.

Comments

- Temperature Control: Temperature monitoring is being conducted and recorded. Food Safety temperature records ar noted on site.
- Manual Dishwashing: (4 Step) - Quats.
- Ensure all food contact surfaces (tongs, spatulas) are being washed and disinfected after use or on a timely manner. (ie: 3-4 hours)
Ensure all items are to be stored in a sanitary manner in order to prevent post contamination. (Clean/organized shelving - Stored upside down, etc.) Soiled articles are not permitted within the storage shelving - monitor.
- Wiping cloth storage: Cloths are to be kept completely submerged!
- Food Storage: Acceptable.
- Sanitary Facilities: Single use towels are to be kept stored inside dispensers at all times.
- Chemical Storage: Ok.
- Staff Hygiene: Discussed.
- Sanitation: Refer to Violation Notes.
- Equipment: Refer to Violation Notes.
- Pest Control: An active Pest Control Program is currently in place. Pest control reports are to be kept on site for review.
- Garbage, Recycling and Composting Disposal: All items are to be kept stored in covered, rodent proof containers.
- Structurally: Ongoing. Continue efforts to keep all surfaces in good repair.
- Ice Machine: Cleaning and disinfection discussed.
- Slicer: Cleaning and disinfection reviewed.
- Food Safe Trained staff on site.
- Corporate Food Safety Plan and Sanitation Plan is on site for reference.
- Kids Play Room: Monitoring is required to be conducted to ensure no issues with health and safety. Routine cleaning should be conducted.
- Security Door under play equipment should be reinstalled? (children able to crawl under play structure)
