Observation (CORRECTED DURING INSPECTION): Foods in top inserts of prep cooler measured 10C. Larger plastic inserts beneath food inserts are obstructing proper air flow (bottom of unit is 2-3C). Operator put them in during the winter months to prevent food from freezing. Food is only placed in cooler 2 hours before lunch.
Corrective Action(s): Remove plastic insert to ensure that foods are held at 4C. If food is still freezing, move the foods to the other coolers overnight.

- Examine bags of peanuts for rodent damage before using
- Continue monitoring and follow pest technician instructions
