203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Chicken made the previous night was cooled in a large bus pan (approximately 6 inches deep). Chicken was at 11C. Chickpeas made the previous night cooled in a 20L pail was at 8C. This is a continuing violation.
Corrective Action(s): Hot potentially hazardous foods must be cooled from 60C to 20C in 2 hours or less and from 20C to 4C in 4 hours or less to prevent the growth of pathogens and or the formation of toxins. Foods can be rapidly cooled in the walk-in freezer, using a mixing wand/ice bath, cooling in smaller containers, etc. Chicken and chickpeas were discarded at the time of inspection. Continued improper cooling of foods will result in the issuance of a violation ticket.

Observation: Sanitizer spray bottles were unlabelled. This is a repeat violation.
Corrective Action(s): Ensure all chemicals are properly labelled to prevent accidental mixing and or misuse of chemicals. Containers will need to be relabelled as needed.

403 - Employee lacks good personal hygiene, clean clothing and hair control [s. 21(1)]
Observation: Staff member was observed wiping hands on her apron.
Corrective Action(s): Discontinue the practice of wiping hands in aprons. Hands need to be properly washed and dried using single use methods. If hands need to be wiped, they can be wiped with a single use paper towel and discarded.

Comments

-Follow-up inspection to April 1, 2022.
-Bleach sanitizer was available in both the front and back kitchen. Bleach was tested at 100ppm to 200ppm.
-Did not observe foods stored in opened metal containers at the time of inspection.
-Did not observe foods double stacked without proper protection at the time of inspection.
-Did not observe foods stored on the floor at the time of inspection.
-FOODSAFE Level 1 valid until November 22, 2025. Staff member who registered for FOODSAFE Level 1 equivalent has not completed training program.
*Continued non-compliance with the Food Premises Regulation will result in the issuance of a violation ticket.
