- Hand wash sinks in kitchen, staff washroom and public washrooms adequately stocked
- 200ppm quats solution available in spray bottle for surface sanitizing; 50ppm chlorine and 62.1 degrees Celsius reached at plate surface in dishwasher
- No signs of pest activity; no food debris/grease/pooled water underneath or in between equipment
- Sliding glass door cooler, prep cooler, walk in cooler all hold below 4 degrees Celsius; walk in freezer holds below -18 degrees Celsius
- Foods are stored off ground, in food grade material only
- Overall sanitation is good
Note: Reminded staff that wiping clean plates with towel post-dishwasher is not necessary. Final step should be air drying.
