Routine check. This is a Wine "U-brew" facility. Customers bottle their own wine (sink available for customers to use to rinse out bottles).
Operator has separate sink for use in wine bottling area and a two compartment sink in cleaning and sanitizing carbuoy area.
Using a chlorine based cleaner/sanitizer - follow directions on the label.
Potassium metabisulphite also used as per directions on chemical packaging and supplier website.
Follow directions on label for safe and proper use of all chemicals.
Hand washing - staff hand sink and washroom hand sink have liquid soap and paper towels in dispensers.
Faucets with hose bibs - air gaps provided (as discussed).
Shelves/floors - surfaces to be kept clean.
Pest control - no obvious signs of pests - recommend monitoring traps especially in back storage room.
