Observation (CORRECTED DURING INSPECTION): Surface sanitizer not available at the beginning of the inspection. Staff had prepared a fresh 200ppm chlorine solution in a bucket at this time.
Corrective Action(s): Ensure to have 200ppm chlorine solution available for use at all times during operation.

Routine inspection conducted:

- Handwashing stations adequately supplied with liquid soap, paper towels and hot/cold running water.
- Coolers operating at/below 4'C; Freezer operating at -18'C.
- Thermometers available for temperature monitoring.
- Hot holding units operating above 60'C.
- Scoops stored in proper manner. Ice machine satisfactory.
- High temperature dishwasher achieved 78.5'C at plate level after final rinse.
- Foods obtained from approved sources.
- Food storage practice satisfactory.
- Professional pest control company contracted. Corners have been sprayed during the recent inspection. Good.

General sanitation of the facility satisfactory but could be improved by cleaning hard to reach areas (i.e. far end of the front kitchen) on a more regular basis.
