Hand washing stations stocked with liquid soap and paper towel
Hot and cold running water available at all sinks
High temperature dishwasher in good working order; detected 74.1 C at plate level after final rinse cycle.
Walk-in cooler at 4 C or lower; stand up cooler beside plate rack at 4 C or lower; intermediary cooler at the entrance of the office at 6~8 C, primarily used for trolleys for very short period of time (no more than a half an hour)
Hot holding unit holding soup at 60 C or higher; walk-in freezer at -18 C or lower; temperature logs are kept and updated daily (at 7pm)
All equipment (including dough mixer and meat slicer) not in use at the time maintained in sanitary conditions; beverage dispenser line maintained in sanitary conditions, serviced once a week
Dry storage well organized and all products off the floor
Staff wearing hairnets and hand washing performed at adequate frequency.
QUAT sanitizer available on site and in use at 200 ppm of QUAT; observed staff using QUAT sanitizer bucket with wiping cloth soaked in it to sanitize residents' tables
