Routine inspection conducted. Premise is generally in satisfactory sanitary condition. The following observations were made:

1. Temperatures (Min: 4C or less)
- All coolers in kitchen at 4C or less (glass door fridge / prep coolers)
- Freezer unit at -18C or below
- Beverage cooler outside at 9C (no potentially hazardous foods)
- Dairy cooler in bar area at 3C
- Rice was cooking at time of inspection

2. Hygiene and Sanitizing
- Hand wash station adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
- Sanitizing pail contains approximately 200 ppm chlorine residual
- Low-temperature dishwasher releases 50 ppm chlorine residual at final rinse cycle
- Utensils and cutting board in good sanitary condition. Potato presser was cleaned and sanitized at time of inspection
- Cook line and ventilation slats are in satisfactory sanitary condition
- Restroom in sanitary condition - however - soap is running low. Ensure that hotel management replenishes the soap in the restroom

3. Storage
- All food products are generally stored off the floor
- Items are covered in tight-fitting lids
- Chemicals stored separately from all food products
- Ready-to-eat foods stored above

4. Administrative
- Operator has FoodSafe 1 (Expiry: April 2023)
- Permit posted and up-to-date

5. Pest Control
- No signs of recent pest activity at time of inspection
- Back door is shut, no visible entry notes noted

6. The following require your attention:
- Remember to conduct a daily mop of the area underneath your cook line
- Place all rags inside your sanitizing pail to avoid accumulation of bacteria on your rags
