Corrective Action(s): Remove the cleaning cloths. Keep this sink clear of any equipment and cleaning cloths. This sink is designated for handwashing only.

Observation: 1) Rice scoops stored in standing, lukewarm water.
2) Cooked meats being cooled in white buckets stored directly on the floor that are uncovered.

2) Store all buckets of foods on shelving units at min 15cm off the floor

Observation (CORRECTED DURING INSPECTION): Frozen, prepackaged raw meat being thawed inside standing water. The water was not being changed every half hour.
Corrective Action(s): Thaw all frozen meats by following the three acceptable thawing procedures:
- inside the cooler at 4C
- in ice water
- in cold running water

Observation: A bucket with standing water stored underneath the front handwashing station. The leak at the front handwashing station has been fixed.
Corrective Action(s): Remove the bucket and the standing water. All standing water must be drained to prevent breeding of pests.

Observation: Build up of food debris near the dishpit and around the dishwasher in the back of the kitchen
Corrective Action(s): Clean up the food debris. Discard food debris in designated organics bin and keep floors as clean and dry as possible at all time to prevent pest issues.

- All handwashing stations supplied with hot/cold running water, soap, paper towels.
- Surface sanitizer available in properly labeled spray bottles at 100ppm chlorine bleach concentration.
- High temperature dishwasher achieved 71C at the plate's level during the final rinse cycle.
- Dry storage area has adequate space and wire racks. Dry food items must be stored min 15cm (6inches) off the floor.
- No signs of pest activity at the time of the inspection. A professional pest control company inspects monthly.
- FOODSAFE trained staff on duty. Verified at the time of the inspection.

- All coolers: < or = 4C
- All freezers: < or = -18C
- Hot holding units (rice cooker, steam tables) > or = 60C
- Thermometers available in all coolers and freezers.
