Cleaning and sanitation has greatly improved in the following areas:
1) Inside walk in cooler and walk in freezer
2) Floors underneath the cooking line
3) Floors around the the walk in cooler/freezer
4) Floors by the dry storage rack
No foods were being stored on the floor (also, in the cooler, all foods have been raised off the floor)
Dishwasher achieved 73.7 deg C on rinse cycle at dish level
Please maintain this level of sanitation regularly and keep a routine cleaning schedule
Continue to remove any items not used in your kitchen as this will help to improve organization.
