- Hot holding unit now holding 60C or above. Staff is using deeper pans and increasing water level to ensure food is closer to the heat source.
- High temperature dishwasher reaches 71C at final rinse at plate level when using 4min cycle.
>>>2min cycle is not reaching temperature. Do not use the 2min washing cycle.
>>>Even at the 4min cycle, multiple cycles need to be ran before dishwasher can reach 71C.
>>>Please acquire probe thermometer (that can read max/min) to check dishwasher temperature. Run the dishwasher with the thermometer in the dishrack. Thermometer must have a max read 71C or higher before dishwasher can be used. Please log dishwasher temperature daily
