Corrective Action(s): Clean and sanitize affected areas with 200ppm Chlorine. Droppings MUST be cleaned in order to establish if infestation is ongoing or eliminated.
Show Pest Technician tomorrow all sites where droppings were found and discuss potential points of entry

Corrective Action(s): Show to Pest Technician tomorrow. Discuss if rodents are able to climb various pipes and conduits to gain access to facility from drop ceiling. Discuss if rodents are able to gain access into gaps under doors.
Door sweep may be better option for front door.

- Three functional sink plugs available for use
- Sanitizer solution in use throughout food preparation areas and at concentrations of greater than or equal to 200ppm QUAT
- Proper thawing techniques observed
- Ice machine and scoop in good sanitary condition
- First In First out and date stamping methods observed in use
- Raw meat stored away from Ready to Eat food items
- Vegetable chopper stored in good sanitary condition
- All food stored in walk in cooler overnight to ensure no contamination from pests

NOTE: Ensure floor is cleaned NIGHTLY and especially in corners and hard to reach areas. Discuss with staff that a possible CLOSURE could result if rodent infestation worsens.
