Observation (CORRECTED DURING INSPECTION): Less than 200 ppm QUATS sanitizer was available inside several spray bottles labelled as "sanitizer". QUATS sanitizer stock bottle contained little sanitizer inside it and the new stock bottle could not be properly connected to the dispenser to dispense 200 ppm QUATS sanitizer at the time of inspection. Note: Chlorine sand QUATS test strips were available on-site.
Corrective Action(s): Culinary Arts Instructor setup 100 ppm chlorine sanitizer into the spray bottles during the inspection to enable food prep. surfaces to be sanitized. Please continue using the 100 ppm chlorine sanitizer to sanitize food prep. surfaces until the QUATS dispenser is able to dispense 200 ppm QUATS sanitizer and you have verified this using the QUATS test strips.

Please contact the district Environmental Health Officer for a follow up inspection once the dispenser is able to dispense 200 ppm QUATS.

Comments

Handsinks were supplied with liquid soap, hot and cold running water, and paper towels.
Culinary arts instructor was advising students to wash their hands before preparing food.
Prep. sinks were in good working order.
3-compartment ware-washing sink was supplied with hot and cold running water.
Overhead sprayer of soiled sink was in good working order.
Dishwasher final rinse temperature was 74.3 degrees C (71 degrees C or hotter) at the plate level.
Walk-in-cooler and other refrigeration units were at or below 4 degrees C and were equipped with thermometers.
Walk-in-freezer was at or below -18 degrees C.
Steam tables were being preheated during the inspection.
Food was covered in storage areas.
No signs of recent pest activity was present at the time of inspection.
Ice machine was in a clean condition.
Culinary Arts Instructor with valid FOODSAFE Level 1 (expiration date: July 10, 2023) was available on-site.
