Observation: High-temperature mechanical dishwasher final rinse temperature measures 67 C for several consecutive cycles. The final rinse cycle must measure at least 71 C in the dishwasher cavity to effectively sanitize dishware.
Corrective Action(s): Adjust or repair the booster heater to achieve a final rinse temperature of at least 71 C (82 C or 180 F on the rinse gauge).

Comments

Well maintained & operated. Sanitation is very good. Refrigeration measures < 4 C. Freezer temperatures measures < -18 C. Ice machine receives a CIP procedure approximately every 6 months, along with preventive maintenance on refrigeration units. Spray sanitizer measures 200 ppm Q. Premises complies with the Transfat regulation. No recommendations.
