observation: Low-temperature dishwasher was out of service at the time of inspection.
correction: operator is already practicing manual were washing in the 3-compartment sink. sinks were set up with 200ppm QUATS sanitizer in 3rd sink. Ensure the dishwasher is serviced and can maintain at least 50ppm chlorine at the dish surface before use.
Rationale: functioning dishwasher with proper sanitation promotes food safety by removing pathogens and toxins from food contact surfaces and preventing foodborne illness.

All units have accurate thermometers.

Sanitation:
All handwashing sinks are adequately equipped with hot/cold water, liquid soap, and disposable paper towels. Sanitizer spray gottles (6) measured at 200ppm QUATS. 3-compartment sink had 200ppm QUATS. Plugs in use.
Washrooms in good sanitary condition.
Nozzles for pop dispensers, coffee, ice-cream, etc. were in good sanitary condition.
Cooler handles and seals in satisfactory condition.

Storage
General practices satisfactory.
Raw eggs stored on bottom shelf of cooler. RTE's on top and separated.
Items are coverd in coolers. Food grade containers in use. Food is 6" off the floor. Time stamping methods used.
Condiments at room temperature and are time tracked on an electronic system. Individual containers are dated.

Pest control
No signs of pest activity noted.
Facility is monitored by a professional pest control company.
