311 - Premises not maintained as per approved plans [s. 6(1)(b)] Observation: -One ceiling tile missing in the dishwashing area and one is partially hanging. -Back splash by dishwashing sink has a gap where backsplash meets the sink. Spray and moisture can enter gap and damage wall. Corrective Action(s): -Replace ceiling tiles which are not in place. Ceiling tiles must be the washable, non absorbent type. -Repair backsplash so that it is affixed properly. Correction date: Sept. 2/17 Violation Score: 1

Comments

-Sanitation level in kitchen has improved since previous report. Walls and floors have been thoroughly cleaned. Ensure this level of sanitation is maintained. -Hot holding temperature for food on buffet line was >60C -Items stored in walk-in cooler were covered. Shelving was in the process of being cleaned at the time of the inspection. -Quats sanitizer (200ppm) present in spray bottles. Spray bottles had labels to indicate contents.
