Observation: 1. Signs of stains and debris noted in the drawer where ice cream scoops were stored.
2. Mildew built up noted inside the ice machine, on the side wall, water tray and pipe.
Corrective Action(s): Clean and sanitize the drawer and ice machine. Discard the current batch of ice in the ice machine. Follow your sanitation plan for regular cleaning schedule.

- 200 ppm quats available in buckets and from the dispenser.
- High temperature dishwasher registered 75C at the plate level.
- Deli slicer and dough mixer maintained in sanitary condition.
- Food stored off the ground.
- Temperature records maintained and available for review.
- General sanitation satisfactory.
- No pest activities observed at the time.

Servery at main floor:
- Domestic fridge freezer section at -20C, cooler section at 4C.
- Hand washing station provided with hot/cold running water, liquid soap and single use paper towels.
- Second floor servery used by residence only.
