Observation (CORRECTED DURING INSPECTION): Inserts at preparation line cooler with potentially hazardous food (cheese, deli meats, veggies) registered at 9-11C internally. Bottom compartment of preparation line cooler registered at 4C
Corrective Action(s): Ensure all inserts with potentially hazardous foods are maintained at 4C or below. only fill insert half way and keep lid closed during non busy periods. Any potentially hazardous food above 4C for 2 hours needs to be discarded

-All handwashing stations are equipped with hot and cold running water, liquid soap and single use paper towels
-3 compartment sink available for manual warewashing
-Quats sanitizer registered at 200 ppm directly from dispenser
-High temperature dishwasher registered at 71C or above during the final rinse cycle on the plates surface
-All food contact surface sanitizers in red buckets registered at 200 ppm Quats solution. Wiping cloth stored in solution when not in use
-Both walk in freezer at -18C or below
-Walk in cooler at 3C
-Under counter cooler at 3C
-Pop cooler at 2C
-Raw egg cooler at 1C
-Inserts in preparation line cooler at 4C or below (after correction - see violation above)
