Code 301 noted on Routine inspection # 243684 of Jan-25-2019
Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: Dough mixer, food press, sticks for tandoor were not maintined in a clean condition as food debris was present on them. Operator stated these were used yesterday.
Corrective action: Operator place the sticks, press blade into the 3 - compartment sink. Ensure they are wash, rinse, sanitized and iar dried after each use, sticks every 4 hours and after final operation.

Follow up inspection:
-dough mixer, tandoor rods, and potato press were in a clean condition.
-100 ppm chlorine sanitizer was setup
-Wall tiles were in a clean condition.
-cleaning improvements were made to the air drying shelving unit.
-Open bags of dry food were being covered.
-Wooden knife holder was replaced with a magnetic strip that can be cleaned and sanitized.
-Newspaper was not being used to line food contact surfaces.
-shatterproof cover was placed over the light bulb in the walk-in-cooler.
-Thermometer was available inside the pizza prep cooler.
-Probe thermometer was purchased and available onsite.
-Broken sieve was replaced with an intact sieve.
-Shelf near the dough mixer had a washable shelf liner placed over it.
-Chest freezer was at or below -18C.

Code 308 is still outstanding. Make sure the seals are replaced inside the pizza prep. cooler with intact seals that are easy to clean, durable, and that provide a secure fit. Date to be corrected by: 2 weeks, February 11, 2019.

Code 501 is still outstanding as operator has an expired FOODSAFE Level 1 certificate. Provide the district Environmental Health Officer of Fraser Health a dopy of your valid FOODSAFE Level 1 certificate upon successfully completing and passing a FOODSAFE Level 1/equivalent course. Date to be completed by: 2 weeks (February 11, 2019)
