Observation: Dough mixer was located between hand sink and pizza oven. This is not the approved location as per the floor plan submission. Operator relocated the dough mixer at time of inspection.
Corrective Action(s): Ensure premises and equipment is maintained as per the approved floor plans. Do not make any changes without health approval.

Comments

Corrected items:
- Meat slicer was in use at time of inspection. Reviewed cleaning/sanitizing procedures with operator. Ensure the unit is taken apart and washed/sanitized minimum every 4 hours as it is used continuously throughout the day.
- Cardboard has been removed.
Reoccuring infractions:
Re code 401: Noted dough mixer still blocking access to hand sink. Operator relocated it at time of inspection. Ensure dough mixer is stored in the approved area as noted on the floor plans. See violation code 311 for more details.
Re code 302: Noted reusable wiping cloths stored on counters. Ensure wiping cloths are stored in sanitizer solution to prevent growth of bacteria on wiping cloths. Bottle of sanitizer testing in kitchen was >400ppm. Instructed operator to dilute the sanitizer a time of inspection.
A follow up inspection will be conducted to verify outstanding infractions have been corrected. Repeated infractions/violations will result in enforcement action (ie. issuance of orders, violation tickets...etc).
