Observation (CORRECTED DURING INSPECTION): Sanitizer bottle located at front food prep area and oven measured 0ppm Quats. Bottle was near empty and used up.
Food prep was occuring during the inspection.
Corrective Action(s): Operator refilled during the inspection.
Ensure to refill on regular basis from the dispenser at the back, at least 1x per week based on use and manufacturer's directions.

Comments

Food Handler Hygiene
o Hand wash stations are fully supplied with liquid soap and paper towels in dispensers
o Operators had clean clothing for food preparation
o Staff and public washrooms appear clean and are fully supplied for hand hygiene

Storage Temperatures
o Cold holding Coolers are below 4C
o Cold holding Freezers are below -18C
o Hot holding food items are at 60C and higher (between 60-72C)

Food Processing and Food Protection
o Cooking - Temperatures are being monitored with probe thermometers
o Food Recalls - Operator is keeping up with this by fax and email, posting on staff bulletin
-Operator said he is aware of current recalls on energy drinks and other items

Maintenance and Sanitation
o 3 Compartment Sink is fully supplied with 200ppm Quats for sanitizing (400ppm measured)
o Storage of chemicals is separate and away from food
o Condition of equipment and surfaces - food contact surfaces and equipment are in good repair and clean condition
o Pest control - Operators have a pest control contractor in place and there are no signs of pests at the time of inspection.
-Reviewed pest control report from December 2023, no infestation noted, minimal to no activity noted indoors.
o Sanitation Plan - Operators have a sanitation plan in place
