Observation: 1) Middle island area paper dispenser did not have a key and staff were unable to refill the paper towel dispenser.
2) Grill cooler door seals require repair/replacement.
Corrective Action(s): 1) Either obtain a key for staff or replace the paper towel dispenser to ensure staff are able to keep the paper towel dispenser filled at all times.
2) Repair or replace under grill cooler door seal to prevent loss of cold refrigeration air.

Comments

Main Deli:
-Walk-in cooler was at 2C.
-Front display coolers ranged from 2C to 4C.
-Burger cooler was at 4C.
-Under grill cooler was at 4C.
-Potentially hazardous foods stored on ice were at 4C.
-Customer area coolers were at 4C.
-Hot holding was greater than 60C. Foods are cooked/reheated to greater than 74C prior to hot holding.
-Hamburger was cooked to greater than 71C.
-Cooked potentially hazardous foods were cooled in single layers and were at 4C.
-High temperature dishwasher had a final rinse temperature of 74C on the dish surface (minimum of 71C required for proper sanitizing).
-Quats sanitizer spray bottles and pails were at 200ppm.
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Deli slicer sanitized every 4 hours.
-General food storage practices good at the time of inspection. Foods stored off the ground and protected from potential contamination.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.

Deli Island:
-Display cooler was at 4C.
-Prep cooler was at 4C (top and bottom).
-Under counter cooler was at 3C.
-High temperature dishwasher had a final rinse temperature of 74C on the dish surface (minimum of 71C required for proper sanitizing).
-Quats sanitizer spray bottle was labelled and tested at 200ppm.
-Foods stored off the ground and protected from potential contamination.

-Staff have valid FOODSAFE Level 1.
