Observation: Dishwasher not sanitizing dishes with 50ppm chlorine sanitizer. Approx. 10ppm measured at time of inspection
Corrective Action(s): Have this machine serviced/ repaired. Last visit the technician doubled the amount of sanitizer liquid being dispensed to compensate for decreased chlorine levels. Have them come back, use the new product, and adjust the dispenser accordingly.

Monitoring logs generally well maintained, however have been neglected for the past week. Diligently checking your critical equipment will safety issues such as failing dishwashers or coolers.
**Please also make sure your thermometers are accurate. The temperatures I measured today were OK, while your temperature logs say otherwise.
Bleach sanitizer found at back in rag bucket, and at front in a mislabelled spray bottle. Bottle was correctly labelled at time of inspection.
No hot holding at time of inspection
One used aluminum can was removed from a large bin of flour. Do not reuse opened cans.
General sanitation of facility good
