-Follow-up inspection to March 28, 2022.
-Chemical dishwasher has been serviced and was found to have a final rinse of 50ppm to 100ppm chlorine on the dish surface. Ensure chlorine is tested daily to verify at least 50ppm chlorine is available for proper sanitizing.
-Fried chicken in the hot holding cabinet is now time tracked. Chicken is cooked every 2 hours.
-Cleaning and sanitizing has been carried out in the facility. Operator found an additional entry point for rodents. Continue to monitor pest activity and contact pest control services as needed.
-Rodent poisons have been removed from the facility.
